The 1800 Wilson Blvd. spot will reopen as Bistro 360, a restaurant, wine bar and gourmet market from Art Hauptman, the owner of Cassat’s Kiwi Cafe on Lee Highway in Arlington.
Hauptman purchased the retail condominium formerly home to Assorti — known for its assortment of Eastern European dumplings and heavy-handed pours — and hopes to open at least the market portion of the business by the end of the summer.
The restaurant’s menu will feature Mediterranean cuisine items for lunch and brunch, with a broader international menu — think Spanish, French, Portuguese, Italian and Turkish, among others — for dinner. Chef Josh Imperato, formerly of Mediterranee Restaurant in Arlington, will design the menu, according to Hauptman.
They haven’t nailed down the entire menu yet, but Hauptman did mention one particular item that’s been taking D.C. by storm during the past few months: khachapuri, a Georgian cheese bread that guests at D.C. restaurant Compass Rose have been fawning over.
The “gourmet market” section of Bistro 360 will feature cheese, charcuterie and accompaniments, breads and pastries, coffee and tea, and other gourmet items, as well as a variety of prepared dishes to go. Retail wine and beer will also be available.
The market will divide the bistro and wine bar sides of the space. Altogether, the restaurant will have 90 indoor seats between the restaurant and the bar, and as many as 50 seats on two separate patios adjacent to the space.
