French bakery coming to Bethesda Avenue to take on the big boys

Fresh Baguette, coming to  Bethesda AvenueA group of Frenchmen are building a new bakery on Bethesda Avenue, and they aren’t worried about the nearby competition.

Eddie Bouillot has been remodeling the interior of the storefront at 4919 Bethesda Ave. for almost a year. When it’s done, the former EuroMotorcars garage will be Fresh Baguette, a modern-looking bakery dedicated to high-quality French baking.

The news was first reported by blogger Robert Dyer.

“We want to use that savoir-faire, the knowledge the French have about bread, about pastries, about ice cream, sweets, anything you want,” Bouillot said.

He’s hoping to open the bakery before the end of the year.

“We want to do very upscale stuff with a modern way of running a bakery,” Bouillot said.

Bouillot and company won’t have the rustic, wood-on-the-wall look you might see at other French-themed bakeries, including at the Le Pain Quotidien location a block away at 7140 Bethesda Lane.

“They make good stuff, but that’s a big chain. We’re doing different things,” Bouillot said. “You can’t have the same quality I will have in my bakery, doing everything here. We want to be better.”

Bouillot will run the restaurant with two partners, including a baker coming in from France.
