WASHINGTON - Are you ready for some football -- football food that is?
Even if the Washington Redskins or your favorite team didn't make it to the Super Bowl, you can still entertain and enjoy eating hearty dishes while watching the Baltimore Ravens take on the San Francisco 49ers.
If you are watching the Super Bowl with friends, you are going to need something substantial, filling and not costly if there are many mouths to feed at your gathering.
Chili is usually a safe bet and a crowd-pleaser. It's also a good dish to prepare in a slow cooker on any given Sunday. My husband brought this recipe to our marriage, and I'm a fan.
My husband's chili
- 1 pound ground beef (or substitute with ground turkey or no meat for a vegetarian option)
- 1 tablespoon vegetable oil
- ¼ teaspoon garlic powder
- ½ cup diced onion
- ½ cup diced green pepper
- ½ cup diced tomato
- 2 cans tomato sauce
- 1 can kidney beans (optional)
- 1 teaspoon salt
- 1 teaspoon chili powder (add more for an extra kick if you like it spicy) Amounts can be doubled and even tripled based on the capacity of your slow cooker.
- Brown meat in oil with garlic powder.
- Place beans (undrained), onion, green pepper and tomato in slow cooker.
- Add tomato sauce, salt and chili powder. Stir.
- Add meat. Stir.
- Cook on high for two hours, stirring occasionally and adding more chili powder if desired.
It only takes 10 minutes
My daughter is taking an after-school cooking class for kids. Her teacher, Allen Dudley, also known as "Mr. D," taught the kids a parfait-style, layered dish that is fast and fun for little football fans to make. Mr. D says It only takes 10 minutes.
- Tortilla chips
- Prepared chicken cutlets (Mr. D prefers Perdue Short Cuts carved chicken breast, grilled Italian style)
- Cheese (mozzarella and Monterrey Jack)
- Crush tortilla chips to make the bottom layer.
- Place the chicken cutlets on top.
- Place a layer of corn on top of the chicken.
- Spread a layer of cheese (mozzarella and then Jack) on top of the corn.
- Add another layer of crushed tortilla chips.
- Repeat the steps in that order to add more layers.
- Pat down the layers and place in the oven for five minutes at 350 degrees.
