There are a lot of good nutrients in the crust of bread.
Keri Glassman, author of “The O2 Diet” says the bread-baking process actually produces a specific cancer-fighting antioxidant, and it’s eight times more abundant in the crust.
In general, dark-colored breads contain higher amounts of antioxidants than light-colored breads. Heavy toasting, though, can reduce levels.
