D.C. gains gluten-free bakery

The District is getting its first gluten-free baker: Rise Bakery plans to open its doors early this summer in Adams Morgan,  Washington City Paper reports. Rise Bakery comes from Michael Koritko, who was diagnosed with celiac disease and found it wasn’t easy finding gluten-free food, let alone fresh-baked goods. 

Koritko left his job as a project manager to open the gluten-free bakery. “I always saw myself doing something that would help other people,” said Koritko.

The baked goods will use nut, tapioca, rice, and coconut flours as well as dairy-free, vegan, and paleo-friendly ingredients, according to the bakery’s  website. Ceremony Coffee will be served, along with sandwiches made with gluten-free bread. The gluten-free bread, along with bagels and pizza crust, will be the only items Rise won’t bake in-house. Koritko says he visited several bakeries looking for the best products to bring to Rise, and although he has not revealed the supplier yet, he’s looking to have an exclusive deal to bring the bread to D.C.

“I want to be the only guy in D.C. who has it,” said Koritko.
